Thanksgiving turkey troubles? Foster Farms hot line again tackles cooks’ questions

Foster Farms stands ready once again to guide Thanksgiving cooks on the proper way to prepare a turkey.

They can call the hot line, 1-800-255-7227, between 8 a.m. and 5 p.m. Tuesday, 7 a.m. and 7 p.m. Wednesday and 7 a.m. to 4 p.m. on the holiday. All hours are Pacific standard time.

The Livingston-based poultry company processes its turkeys in Turlock. It was by far the largest user of the 7.5 million birds raised in Stanislaus County last year, according to the Agricultural Commissioner’s Office.

Foster Farms also has tips on its website, www.fosterfarms.com. Consumers can learn about preparing a turkey with a rub, marinade or brine. They can cook it in an oven or on a rotisserie or grill, and carve it afterward according to the instructions.

And they get can a stuffing recipe by the late Verda Foster, who founded the business with husband Max Foster in 1939.

Don’t forget about food safety: Turkey should be cooked to an internal temperature of 165 degrees, as measured by a meat thermometer. Utensils, cutting boards, hands and other surfaces should be washed thoroughly after touching raw turkey.

Diestel Family Ranch also has tips for the higher-end turkey it raises near Sonora, including a day-by-day task list (Friday calls for rest and sweatpants) and a recipe for the best leftover turkey sandwich. The company last month won a Sustainable Innovation Award from Good Housekeeping magazine.
