Old Man Dutch Oven Potatoes

Serves: 10 to 12

Robyn Davis of Sacramento shares this easy recipe she used often when her son was in the Boy Scouts. Davis suggests adding precooked hamburger or ham chunks to this dish to make it a main meal.

Ingredients:

10 to 12 medium baking potatoes

6 to 8 slices thick-sliced bacon

Several large white or yellow onions, sliced thick

1 cup grated cheddar cheese (more or less, to taste)

Salt and pepper, to taste

½ cup butter or margarine

Instructions:

Scrub potatoes and slice thick without peeling. Put in cold water and cover. Fry bacon in bottom of camp Dutch oven and remove. Discard drippings. Drain potato slices and layer in Dutch oven, alternating with onions, bacon and cheese. Season with salt and pepper and top with butter.

Cover Dutch oven and set in moderate coals. Add coals on top of oven and bake 1½ hours. About 15 minutes before serving, uncover and sprinkle with more cheese.
