Libby's Pumpkin Roll

Susan Browning of Orangevale was looking for a recipe for a pumpkin cream cheese jelly roll.

Kelli Ott of Modesto shares this recipe, which she found on a Libby's canned pumpkin label.

Connie Martinez of Modesto has been making this dessert for 15 years during the holidays and gives it as gifts to her friends who do not bake. Her family and friends love it. She says it freezes well, so you can make it in advance.

Ingredients:

Cake Ingredients

¾ cup all-purpose flour

½ teaspoon baking powder

½ teaspoon baking soda

½ teaspoon cinnamon

½ teaspoon ground cloves

¼ teaspoon salt

3 large eggs

1 cup granulated sugar

2/3 cup Libby's 100 percent pumpkin

1 cup chopped walnuts, optional

Powdered sugar

Filling Ingredients

One 8-ounce package cream cheese, softened

1 cup sifted powdered sugar

6 tablespoons butter or margarine, softened

1 teaspoon vanilla extract

Powdered sugar

Instructions:

For cake: Preheat oven to 375 degrees. Grease a 10-by-15-inch jellyroll pan; line with waxed paper. Grease and flour paper. Combine flour, baking powder, baking soda, cinnamon, cloves and salt in a small bowl. Beat eggs and sugar in large mixer bowl until thick. Beat in pumpkin. Stir in flour mixture.

Spread evenly into prepared pan. Sprinkle with nuts, if using. Bake for 13 to 15 minutes or until top of cake springs back when touched.

Sprinkle a thin cotton kitchen towel with powdered sugar. Immediately loosen and turn cake onto prepared towel. Carefully peel off paper. Roll up cake and towel together, starting with narrow end. Cool on wire rack.

For filling: Beat cream cheese, powdered sugar, butter and vanilla extract in small mixer bowl until smooth. Carefully unroll cake; remove towel. Spread cream cheese mixture over cake. Reroll cake. Wrap in plastic wrap and refrigerate at least one hour. Sprinkle with powdered sugar before serving.
