Cranberry Wheat Berry Bread

Makes a 1 1/2-pound loaf
Wheat berries are whole, unmilled kernels of wheat. They are high in protein and need to be cooked or soaked before using in a recipe. This recipe comes from "The Best Bread Machine Cookbook Ever" by Madge Rosenberg.
Ingredients:
1/4 cup wheat berries
1 cup water (for wheat berries)
2 1/4 teaspoons active dry yeast
1 3/4 cups plus 2 tablespoons bread flour
1 1/2 cups whole wheat flour
3 tablespoons sugar
1 1/2 teaspoons salt
1/3 cup raisins
1 1/2 tablespoons vegetable oil
1/3 cup cranberries
1 cup plus 2 tablespoons water
Instructions:
Bring 1 cup of water to a boil, then add the wheat berries. Lower the heat and simmer for about one hour, until the berries have absorbed the water and are chewy and tender. Add the cooked wheat berries and all remaining ingredients in the order suggested by your bread machine manual and process on the basic bread cycle according to the manufacturer's directions.
Note: Cook time is one hour for wheat berries. Time to bake bread in bread machine will vary according to manufacturer's directions for your model.
