ZUCCHINI WEEK: CHOCOLATE ZUCCHINI CAKE

With summer heat bearing down on so many back yard gardens, zucchini is about the only crop thriving. This week, we'll share ideas for turning zucchini into something zu-yummy. Today's recipe comes from Cooking Light magazine.

INGREDIENTS



Cake:

Cooking spray

1 tablespoon all-purpose flour

3/4 cup granulated sugar

1/2 cup packed brown sugar

1/2 cup (4 oz.) block-style fat-free cream cheese, softened

1/3 cup vegetable oil

2 large eggs

2 large egg whites

1 teaspoon vanilla extract

2 1/2 cups all-purpose flour

1/2 cup unsweetened cocoa

2 teaspoons baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1/2 teaspoon ground cinnamon

3/4 cup fat-free buttermilk

2 cups shredded zucchini

2/3 cup semisweet chocolate chips

1/4 cup chopped walnuts



Glaze:

3/4 cup powdered sugar

3 tablespoons unsweetened cocoa

8 teaspoons fat-free milk

2 tablespoons semisweet chocolate chips

1 teaspoon instant coffee granules

1/2 teaspoon vanilla extract
