This recipe, also from Arlene Park, includes Parmesan cheese and spices. You can add to or change the spices to suit your taste
1½ pounds baking potatoes, about 3 medium
Nonstick cooking spray
¼ cup Parmesan cheese
¼ teaspoon salt
¼ teaspoon pepper
¼ teaspoon paprika
Preheat oven to 450 degrees. Wash the potatoes and cut into thin strips or wedges, as you prefer. Coat potato strips with cooking spray and place in a large, heavy-duty, zip-top plastic bag.
Combine cheese, salt, pepper and paprika. Sprinkle over potato strips or wedges in the bag. Seal the bag and turn to coat the potatoes well.
Arrange the potatoes in a single layer on a large foil-lined baking sheet that has been sprayed with nonstick cooking spray.
Bake for 15 minutes, turning once. Add five minutes for wedges. Serve immediately.
