8 small red potatoes
1 large yellow onion
1 poblano pepper
¾ cup mayo
½ cup sour cream
Salt to taste
Quarter and cook the potatoes. Roast and peel the pepper. Slice and carmelize the onion.
In a blender, mix pepper, mayonnaise, sour cream, juice of the lime and salt to taste. Blend all.
