Brother Timothy's Dressing

This recipe from Christian Brothers Brandy is from Carrie Munroe of Modesto


1 1-pound package pork sausage


1 cup chopped onion

½ teaspoon rosemary, crushed

½ teaspoon mint flakes

‹ teaspoon nutmeg

½ cup chicken broth, plus additional to moisten, if needed

½ cup brandy

1 teaspoon salt

‹ teaspoon pepper

2 quarts dry stuffing

½ cup toasted almond slices

ª cup Parmesan cheese

1 10-ounce package chopped spinach, defrosted and drained


Brown sausage in pan. Remove sausage but save drippings. Pour drippings into liquid measuring cup and add enough butter to equal 1 cup. Return to pan. Slowly cook onion and herbs until soft. Add broth, brandy, salt and pepper. Then add stuffing mix, almonds, and Parmesan cheese. Add extra chicken broth to moisten, if necessary. Add spinach and sausage. Bake in greased casserole dish at 325 degrees for 45 minutes.
