Ceviche of Red Snapper, Pomegranate and Coconut:

1 2lb red snapper skinned & chopped

1 small red onion small dice

1 cup coconut milk

¼ cup pomegranate seeds

1 ounce PAMA Pomegranate Liqueur

2 tbsp cilantro

2 tbsp fish sauce

2 tbsp lime juice

salt and pepper to taste

Mix and serve.
