Texas Pico

Makes 2 cups

This is perfect on tacos, fish and baked potatoes, too. This recipe also is from "The Texas Cowboy Kitchen."

Ingredients:

6 jalapeños, sliced

1 red onion, diced

6 green onions, thinly sliced

2 tomatoes, diced

Instructions:

Toss jalapeños, onions, tomatoes and cilantro in a bowl. Drizzle with lime juice and top with salt, and toss again to combine. Let sit for about 15 minutes before serving.
