Shrimp Aspic

Prep time: 15 minutes Serves: 9 to 12

Karen Sherve of Susanville was looking for aspic recipes. We featured two in the Mailbox recently.

Here is one more from Clare Spickelmire of Elk Grove.

Ingredients:

2 3-ounce packages lemon gelatin

3¼ cups boiling water

½ cup chili sauce

1 cup finely chopped celery

½ cup diced onion

½ cup diced green bell pepper

2 cups small shrimp

Instructions:

Dissolve gelatin in boiling water. Add chili sauce. Chill until thickened but not firm. Add remaining ingredients. Chill until firm. Can be molded or cut into squares and served on a lettuce leaf.

Note: The prep time does not include the two chill times.

Per serving, based on 9 servings: 128 calories; 9 grams protein; 23 grams carbohydrates; trace fat; 49 milligrams cholesterol; 551 milligrams sodium; 0 fiber; 21 grams sugar; 4 percent calories from fat
