3 ounces bran-flake cereal with dates or raisins
1 1/2 cups whole-wheat flour or oat flour
1/4 cup sugar
1 tablespoon baking powder
1 cup skim milk
1/3 cup plus 2 teaspoons unsalted margarine, melted
1 egg beaten
Preheat oven to 400 degrees. Mix cereal, flour, sugar and baking powder with a fork. In a 2-cup measuring cup, thoroughly blend milk, margarine and egg.
Add milk mixture to dry mixture and stir to combine, don't overmix or beat. Using a 12-cup nonstick muffin pan with 2½-inch diameter cups (or spray with nonstick spray for regular pan), spoon batter into each cup. Bake for 15 to 20 minutes until muffins are browned and test done.
