BEST OF RECIPE OF THE DAY: CARRIE'S LEMONY DELIGHT

This week and next, we're sharing the greatest hits from Recipe of the Day's lifespan. Today's is one of the best uses of arugula we've ever tried.

INGREDIENTS

2 tablespoons extra virgin olive oil
Juice from half a lemon
Kosher salt
Cracked pepper
1/2 cup finely grated pecorino cheese
One bunch arugula

DIRECTIONS

Whisk olive oil, lemon juice, salt and pepper together. Toss arugula with dressing and grated cheese.
