2 cups old-fashioned rolled oats

1 cup each shredded unsweetened coconut
1 cup chopped walnuts
2⁄3 cup dried cranberries
2⁄3 cup crystallized ginger (4 ounces)
Grated zest of one large orange
¾ cup sweetened condensed milk
Preheat oven to 275 degrees. Position rack in the middle of the oven. Line rimmed baking sheets with parchment paper.
Place oats, coconut, walnuts, cranberries, ginger and orange in a large bowl and stir to combine. Add condensed milk and stir thoroughly to coat all ingredients. Transfer mixture to prepared baking sheet and spread out in an even layer. Bake until the granola is lightly browned. Cool. Store in an airtight container for up to three weeks.
