Therese Price of Sacramento misses the Cafe California that used to be in Davis. She particularly enjoyed its house dressing.
The dressing was also a favorite of Marilynn Vilas of Davis. She asked the owners of the restaurant how it was made and was given a general recipe.
The owners didn't specify the type of mustard or oil, so Vilas came up with this version. She uses the dressing with spinach and adds mandarin orange segments, slivered almonds and sliced scallion tops just before serving.
1/4 cup honey
2/3 cup vegetable oil
2 tablespoons prepared Dijon mustard
1/4 cup apple cider vinegar
Sesame seeds, optional
Combine all ingredients and refrigerate overnight. Add sesame seeds, if using, just before serving.
