Here's another delicious beet recipe from Connie Lane.
4 whole fresh beets with tops, about 2½ inches in diameter
1½ cups water
2 teaspoons lemon juice
¼ cup apricot preserves or orange marmalade
Salt and nutmeg
Cut beet tops, leaving 2 inches attached to beets. Scrub thoroughly. Put into a 6-quart kettle. Cover with water, cover with lid and simmer until tender.
Cool beets under cold water and slip off skins. Cut into cubes or slices.
Put lemon juice, fruit spread and seasonings in kettle, heat and stir to soften spread.
Add beets, stir to coat and heat through.
Per serving: 58 calories; 1 gram protein; 14 grams carbohydrates; trace fat; 0 cholesterol; 146 milligrams sodium; 1 gram fiber; 8 grams sugar; 2 percent calories from fat.
