Here are two methods for cooking beans:

Traditional method: Place 1 pound red beans in a bowl with enough cold water to cover them by 3 inches. Soak four to eight hours. Drain water and place beans in pot with enough cold water to cover by 2 inches. Bring to a boil; immediately reduce heat and simmer gently until tender, one to 1½ hours.

Quick-Soak method: Place 1 pound red beans in a pot with enough cold water to cover them by 3 inches. Bring to a boil for two minutes, then turn the heat off and allow beans to soak in the pot with the water for one hour.

Drain, return to the pot and cover with cold water by 2 inches. Bring to a boil; immediately reduce heat and gently simmer until tender, one to 1½ hours.
