Spicy Crispy Beef

Mitchell Cari of Orangevale and his wife love the crispy beef served at a Chinese restaurant in Fresno. They were looking for a restaurant in the Sacramento area that serves this dish.

Barbara Nakatomi of Rancho Cordova recommends the sesame beef served at South Sea Villa and Chinese Gourmet restaurant in Elk Grove (8409 Elk Grove-Florin Road).

Nakatomi says it's sweet, crunchy and delicious. She has this dish with green beans in garlic sauce, steamed rice and seaweed tofu soup.

Kerri Price of South Natomas recommends Good Friends Chinese Restaurant (2600 Gateway Oaks Drive, South Natomas), where they serve hot and crispy beef.

In case Cari or his wife would like to make this dish at home, Janice Thornton of Merced shares this recipe, which might fill the bill.

• Ingredients:

1 quart oil, for frying

¼ cup cornstarch

¼ tablespoon salt

Black pepper, to taste

12 ounces flank steak, thinly sliced

¼ cup soy sauce

1 tablespoon rice vinegar

½ tablespoon rice wine

1½ tablespoons honey

7 tablespoons granulated sugar

½ tablespoon chili paste

¼ cup water

3 tablespoons chopped fresh ginger root

1 tablespoon vegetable oil

2 garlic cloves, chopped

¼ cup sliced onion

¼ cup diced red bell pepper

• Instructions:

Heat oil in deep fryer to 375 degrees.

Meanwhile, in a mixing bowl, combine cornstarch, salt and pepper. Mix thoroughly. Add steak slices and coat well. Deep-fry the steak slices until golden brown. Make sure they are cooked through. Remove from oil. Set aside.

In another mixing bowl, combine soy sauce, rice vinegar, rice wine and honey. Add sugar, chili paste, water and ginger root. Mix well and set aside.

Heat a wok or deep-frying pan over medium high heat. Add one tablespoon oil and quickly sauté the garlic, onion and red bell pepper for 30 seconds. Add the sauce mixture and cook another 30 seconds. Finally, add the strips of fried steak and toss to heat through and coat with sauce.

• Per serving, based on 4 servings: 418 calories; 20 grams protein; 40 grams carbohydrates; 20 grams fat (5 saturated, 6 monounsaturated, 9 polyunsaturated); 44 milligrams cholesterol; 1,808 milligrams sodium; 1 gram fiber; 30 grams sugar; 44 percent calories from fat.
