This recipe is from "Coffee Love: 50 Ways to Drink Your Java," by Daniel Young (Wiley, $17.95).
Ingredients:
½ cup ground coffee
2½ cups water
1 orange peel, cut into 1-inch strips
¼ cup brandy
2 tablespoons sugar
6 whole cloves
2 cinnamon sticks
Instructions:
Place the coffee in the filter of a drip coffeemaker or the pot of a French press. Heat the water to near boil. For a manual drip coffeemaker, pour just enough of the water evenly over the coffee to wet the grinds. Wait 30 seconds, then pour the remaining water over the coffee. If using a French press, pour the water over the grinds, stir and cover. Let steep for four minutes, then carefully push the plunger down to the bottom of the cylinder, making sure to keep it level.
Combine the orange peel strips, brandy, sugar, cloves and cinnamon in a saucepan over medium heat and cook but not boil until the sugar is dissolved.
Using a long match, carefully set the brandy mixture aflame. Gradually add the coffee to douse the flames, strain into four small cups and serve immediately.
