For many folks, "the chopping block" isn't a good thing. But for John Pallios and Denise Pallios Zagaris, the Chopping Block represents a new start at an old business.
The sibling partners spent much of their lives working at the Richland Markets their father and two uncles started in 1951. When the last Richland closed in 2012, John's wife Judy said in an email, both John and Denise, as second-generation grocers, decided that they were not ready for retirement and had to figure out what to do with themselves.
They decided to open a smaller version of the store, focusing on an old-fashioned butcher shop and deli, on Coffee Road near Floyd Avenue.
According to Judy Pallios "She's better at this stuff than I am," John told me when we talked on the phone the butcher shop provides choice and prime cuts of beef, fresh pork, lamb and poultry. Trained butchers are on staff for special meat cuts as requested. Chopping Block also offers marinated meats, rotisserie chicken and tri-tip roasts made fresh throughout the day.
A produce section and fresh baked breads are available, along with a small grocery section.
Chopping Block also serves custom-made and specialty sandwiches, as well as gourmet salads and wraps. So you could stop by for lunch and pick up a roast to make for dinner.
The shop had a soft opening this week; grand opening is set for Friday. Find it at 2625 Coffee Road, Suite A, Modesto. Hours are daily, 9 a.m. to 7 p.m. Check it out on Facebook or call (209) 408-8850.
