Sausage and pepper bake

Prep time: 20 minutes

Cook time: 53 minutes

Serves 6 to 8

This easy recipe comes from J. Merlo of Sacramento who says it's a family winner. Unlike today's other sausage, pepper and onion recipe, this one is baked in the oven.

Ingredients:

2 red bell peppers, thinly sliced

2 green bell peppers, thinly sliced

2 medium onions, thinly sliced

4 large cloves garlic, chopped

4 teaspoons fresh oregano, lightly chopped

¼ teaspoon dried crushed red pepper

2 tablespoons olive oil

Salt and pepper, to taste

1 pound sweet Italian sausages

1 pound hot Italian sausages

Instructions:

Preheat oven to 350 degrees. In a large bowl, combine bell peppers, onions, garlic, oregano and crushed red pepper. Mix in the olive oil and pour into a 13-by-9-by-2-inch baking dish. Season with salt and pepper. Brown sausages in a heavy large skillet over high heat, turning often, about 8 minutes. Arrange on pepper mixture.

Bake until sausages are cooked through and peppers are tender, stirring occasionally, about 45 minutes.

Per serving, based on 8: 240 calories; 20 grams protein; 8 grams carbohydrates; 14 grams fat (3 saturated, 5 monounsaturated, 1 polyunsaturated, 5 other); 51 milligrams cholesterol; 691 milligrams sodium; 1 gram fiber; 54 percent calories from fat.
