Spicy Thai pizza

The Mailbox recently featured a quick and easy pizza recipe using a pre-baked pizza crust such as Boboli. We asked our readers to share their favorite Boboli recipes.

Today's recipes come from Jill Bower of Modesto and feature Foster Farms chicken products and Boboli brand prebaked pizza.

Ingredients

¼ cup creamy peanut butter

¼ cup teriyaki sauce

1 tablespoon Thai chili sauce

2 teaspoons honey

2 Foster Farms Rotisserie Breast Fillets, thawed and shredded (these are precooked)

1 prebaked pizza crust such as Boboli

1 cup shredded part-skim mozzarella cheese

½ cup shredded carrot

1/3 cup fresh bean sprouts

¼ cup chopped salted peanuts

1 tablespoon minced fresh cilantro

2 green onions, thinly sliced

Instructions

Preheat oven to 425 degrees. In a small bowl, whisk together the peanut butter, teriyaki sauce, chili sauce and honey. Place shredded chicken in another small bowl, add half of the peanut butter mixture and toss to coat.

Spread remaining peanut butter mixture over crust; top with chicken and cheese. Bake at 425 degrees for 10 minutes or until crust is golden brown. Sprinkle with remaining ingredients and serve.
