This week and next, we're sharing the greatest hits from Recipe of the Day's lifespan. Today's offers an excellent use for those last remaining garden tomatoes.

INGREDIENTS

6 medium to large tomatoes, diced
2 shallots, chopped fine
4 tablespoons fresh basil, chopped
½ cup extra-virgin olive oil (or to taste)
¼ cup of balsamic vinegar (or to taste)
Salt, to taste
1 loaf French bread (or baguette for appetizer-sized bites)
Olive oil
Goat cheese

DIRECTIONS

Combine diced tomatoes, chopped shallots, chopped basil, olive oil, balsamic vinegar and salt. Slice bread about ½ inch thick. Arrange bread slices on large cookie sheet. Drizzle olive oil over each slice and spread with butter knife or paper towel. Put bread under oven broiler until it starts to toast (about 3 minutes, but watch closely). Flip bread over and toast backside. Spread slices evenly with goat cheese. Arrange toasts on platter and allow guests to spoon tomato mixture on top.
