Backyard tomato plants are at their most productive right now, meaning that gardeners (and their co-workers and neighbors) are looking for ways to use the bounty. This week, we'll share a few ideas for using fresh tomatoes. Today's comes from Country Living.

INGREDIENTS:

1 lb. (about 4 ) tomatoes, chopped
1/4 cup red onion, chopped
1/4 cup seedless cucumber, chopped
1/4 cup red bell pepper, chopped
1 clove garlic, chopped
2 tablespoons extra-virgin olive oil
1 tablespoon red wine vinegar
3/4 teaspoon salt
1/2 teaspoon cumin
1/8 teaspoon cayenne pepper
2 avocados, diced (about 2 cups)
