Swiss chard

Serves: 2 to 3

This recipe is from Ratto Bros. produce near Modesto.

• Ingredients:

3 tablespoons olive oil

1 bunch of leeks, root end and green tops removed, washed and halved and then cut into ¼-inch pieces

1 cup chicken broth

2 bunches green chard, washed, trimmed and cut into large pieces

5 garlic cloves, sliced in half

• Instructions:

Warm olive oil in a skillet, add leeks and sauté for four to five minutes on medium-high heat or until leeks begin to turn soft. Next, add the chicken broth, chard and garlic. Turn heat to medium and cover with a lid. Simmer for three minutes and then remove lid and set aside. With a spatula turn over the chard so it cooks evenly on both sides. Cover the chard with lid and continue cooking five more minutes.

Turn off heat and let covered skillet cool for two minutes, and then serve.
