EVEN CLOSER TO THANKSGIVING WEEK: CORN BREAD PUDDING

Thanksgiving is even closer this week than it was last week, so we'll offer more recipes that will help you plan your big meal. This side dish idea comes from "The Dish Divas Cookbook."

INGREDIENTS

1 small onion

1 tablespoon butter

1/2 teaspoon thyme

1/2 teaspoon rosemary

1 15 oz. can cream style corn

1 cup whipping cream

2 eggs

1 small box Jiffy corn bread mix

1/2 cup cheddar cheese, shredded

1 teaspoon salt

1/2 teaspoon pepper

DIRECTIONS

Preheat oven to 350 degrees. Saute onion in butter with spices until translucent, about 5 minutes. Combine corn, whipping cream, eggs, cornbread mix, cheese, salt and pepper. Add onion mixture. Pour into a greased 2 quart casserole dish and bake 40 minutes or until set.
