Every year, our son hikes and backpacks near Bishop. He always brings home several loaves of a delicious and nutritious bread called Swiss Volkoren (Dutch for "full grain"). He buys it at Erick Schat's Bakkery in Bishop. I would love to bake it myself if anyone has the recipe. The ingredients listed on the package are unbleached organic flour, crushed wheat, cracked wheat, water, salt, yeast, gluten, walnuts, sunflower seeds and raisins.
