Serves: 10 to 12

This recipe is from Carlen Jupe of Salida.

• Ingredients:

5 or 6 large potatoes, in ½-inch cubes

1 large onion, white or yellow, in ½-inch cubes

1 (12 ounces) can Spam, in ½-inch cubes

4 teaspoons butter

1 tablespoon flour

2 quarts to 1 gallon milk

Salt and pepper to taste, but at least ½ teaspoon salt

• Instructions:

Boil potatoes. Melt 1 teaspoon butter in a frying pan and sauté the diced onion. Set aside. Melt 3 teaspoons butter in a pot over low heat, stirring constantly. Add 1 tablespoon flour and 1 tablespoon milk. Stir to the consistency of a smooth paste. Add milk, a little at a time in increasing amounts, not letting the sauce get too watery, stirring constantly to avoid lumps, and turning up the heat gradually. Add Spam, onion and drained potatoes after all the milk has been incorporated into the base.
